Slow Cooker Roast Beef

This super easy roast is so tender, juicy and tastes absolutely incredible with barely any prep time and the slow cooker does all the work!

Hands up if your slow cooker is one of the best inventions to humankind. Both my hands are raised! 🙂 That handy lil appliance has been my saving grace too many times to count. I tend to often leave mine standing out on the counter when I know I have busy days coming up where I’ll be out all day. It’s such a warm and hearty dinner to come home to that you can prepare with minimum effort.

When my younger sister comes to visit, she always requests a few of her favorite meals (I usually ask her to. It makes meal planning easy peasy!), and without a doubt, my slow cooker roast is always on the list. How can anyone turn down the smell of a flavorful, perfectly seasoned roast cooking away? Serve this delicious roast alongside buttery mashed potatoes and steamed peas and you have a 5 star meal that took so little effort. Boom!

You must put this on your next menu, I promise you won’t regret it. The best part? Lots of leftovers for the next day! The beef releases its juices into the broth, giving your roast amazing flavor. Adding flour & butter turns that liquid gold into a delicious, thick gravy.

Serves 6

INGREDIENTS

  • 3 lb chuck roast
  • 4 cups of beef broth
  • 1 teaspoon of minced garlic
  • 1 teaspoon Italian seasoning 
  • 1 teaspoon of salt
  • 1/2 teaspoon pepper
GRAVY
  • 2 cups beef broth (from the crock pot)
  • 4 tablespoons butter
  • 1/4 cup all purpose flour

INSTRUCTIONS

  1. Add the beef to the crock pot and sprinkle the minced garlic and seasonings on top of the meat. (If you have time, go ahead and mix the seasonings together, rub them into the roast and sear it before placing it into the crock pot. It locks the flavors in and it’s oh so good!!)
  2. Next add in your beef broth. It’s okay if your meat isn’t completely submerged. 
  3. Cover and cook on low for 8 hours or on high for 6 hours.
TO MAKE THE GRAVY
  • Remove 2 cups of beef broth from the slow cooker and set aside. In a medium saucepan melt the butter over medium heat. Add in the flour and whisk together, making sure to get all visible lumps. Very slowly add broth, stirring constantly. Turn heat to medium-low and continue stirring until gravy thickens – 3-5 minutes. If the gravy is too thick, stir in a little more broth.
  • Place roast on a serving platter. Use a fork to gently pull apart the roast. Pour gravy over roast and serve. Enjoy!
TIPS FOR AN EASY MORNING

I like to prep my vegetables that’ll I’ll be using for dinner the evening before so that I don’t have to take the time to do that extra task before dinner (that’s usually crazy time in our house, coming back from school pick-up & wanting all.the.snacks). 

  • Peel and cut carrots and store them in a covered dish in the fridge. 
  • Peel and cut potatoes, submerge them in a large container of cold water and store them in the fridge as well. Just drain them before using and add fresh water. 
  • The seasoning mix can be made the night before to save some time in the morning. Who doesn’t need that extra 10 minutes of sleep? I know I do 😉 ! 
  • For extra flavor, the beef can be seasoned the night before as well and stored in a large ziplock bag in the fridge.
