Slow Cooker Honey Barbecue Chicken Sandwiches

These simple but delicious Slow Cooker Honey Barbecue Chicken Sandwiches are a must for your dinner menu! Tender, sweet and flavorful shredded chicken, topped with creamy coleslaw on a toasty bun will be a hit for the whole family.

My slow cooker is hands down my favorite kitchen item. It’s used several times a week for overnight breakfast, soups, sauces, variety of shredded meats, lasagna, corn on the cob, desserts, you name it! If it’s not on your favorites list, then you’re missing out on how life-changing it can truly be. 😉 Summer time I usually have it on our back patio and there’s no extra heat in the house and during winter time you can make ALL the hot soups and comforting dinners in it while taking in the mouth-watering aroma all day! 

Slow Cooker Barbecue Chicken is the easiest 5 ingredient chicken dinner you can make! All you need is skinless, boneless chicken breasts, your favorite honey barbecue sauce, brown sugar, zesty Italian salad dressing, brown sugar and Worcestershire sauce. The barbecue sauce paired with the Italian dressing creates a surprisingly amazing flavor! Dump it all into the slow cooker, set it and forget about it while it does all the work for you. Then a few hours later you get to enjoy a delicious dinner with very minimal clean up! It’s become one of our favorite meals. Incredibly easy to toss together – check, tastes great – check, and reheats well – check! 😉

Yield: 4-6 servings  

INGREDIENTS

  • 3 large chicken breasts 
  • 1 1/2 cup honey barbecue sauce (I use Sweet Baby Ray’s)
  • 1/3 cup Zesty Italian Salad Dressing
  • 1/4 cup brown sugar 
  • 1 tablespoon Worcestershire sauce
  • Homemade or store-bought coleslaw
  • 6 hamburger buns

INSTRUCTIONS

  1. Place chicken breasts in your slow cooker. 
  2. In a separate bowl, add barbecue sauce, zesty Italian salad dressing, brown sugar and Worcestershire sauce and whisk until well combined. Pour sauce mixture over the chicken. 
  3. Place lid on slow cooker and cook on high 3-4 hours or low 6-8 hours.
  4. Remove the chicken from the slow cooker and shred using two forks. The chicken is so tender and should shred very easily!
  5. Return shredded chicken to the slow cooker and stir it into the sauce.
  6. Serve on hamburger buns, topped with coleslaw and enjoy!
