These perfectly seasoned roasted carrots, with a tender-crisp texture and caramelized edges make them the perfect side dish to just about any meal. Roasting them brings out the sweetness and they are just so delicious.
Roasting carrots at a high temperature brings out so much flavor – this makes them taste delicious all by themselves! Carrots are so affordable, their longevity is great if stored properly, they’re healthy and so easy to prepare. Peeling them before you roast them isn’t necessary – they’ll just have a bit of a different texture and might be a bit more tough. I prefer to peel mine before cooking them but it’s definitely optional!
Let’s go ahead and prep them! Wash and peel the carrots (or if you like the rustic look 😉 leave them unpeeled). Next, slice them into strips – make sure they are in uniform shape and size so they’ll roast evenly. Go ahead and add them in olive oil, then add your seasonings and toss them around until the carrots are all coated. I recommend using a larger tray so the carrots have plenty of room and aren’t touching/overlapping.

INGREDIENTS
- 1 lb carrots, washed & peeled
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon brown sugar
- 1 teaspoon thyme leaves
INSTRUCTIONS
- Preheat oven to 425F.
- Wash and peel carrots.
- Cut carrots into uniform strips and toss with olive first, then with seasonings.
- Spread evenly on a baking sheet lined with parchment paper (yay for easy cleanup!)
- Roast on the middle rack for 25 minutes, tossing halfway, or until carrots are tender and slightly caramelized.
- Sprinkle with thyme leaves and serve warm.
