Peanut Butter Scotcheroos

Crunchy and chewy Peanut Butter Scotcheroos is an easy and delicious no-bake treat when you’re in a jam! Topped with chocolate and butterscotch, it’s so hard to say no to these no-fuss bars!

When summer rolls around, I just can’t get enough of no-bake treats. With three growing boys at home for a couple of months, you can’t imagine the food we go through! 😉 While I was taking pictures of these tasty lil things, I turned my back for a few seconds, and my 5 yr old was happily enjoying 3 pieces he snuck off to his bedroom. So if I say that I’m constantly needing snacks on hand, I’m not kidding. We make sure to balance it out with healthy treats, too. 🙂  

These bars are so simple to make, they’re packed full of flavor and made fairly quickly. They’re made with six simple ingredients and are a perfect go to for potlucks, picnics, or backyard BBQ’s. A lot of the recipes for these bars contain corn syrup but we try to steer away from that stuff. I used honey and the flavor is amazing! Such a great stress-free dessert that everyone is going to love!

Recipe Tips
  • Keep your eyes on the honey and sugar mixture. Remove it from the heat AS SOON as it starts boiling. Don’t let it boil at all, or the bars will be very hard.
  • Work fast as the mixture will cool down and set pretty quickly.
  • You can add half a tablespoon of butter or coconut oil or shortening to the chocolate and butterscotch chips to help them melt smoothly. This is completely optional. 
  • If you love sweet and salty, sprinkle some coarse sea salt over the melted chocolate layer before it hardens. It’s an unbeatable combo!
Yield: 24-28 bars

INGREDIENTS

  • 6 cups Rice Krispies
  • 1 cup peanut butter
  • 1 cup honey
  • 1 cup sugar
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups butterscotch chips

INSTRUCTIONS

  1. Prepare a 9×13 inch baking dish either by lining with parchment paper or with a light coating of butter.
  2. Combine the Rice Krispies and the peanut butter in a large mixing bowl (do not mix yet). Set aside.
  3. Combine the honey and sugar in a medium saucepan over medium-high heat. Cook, stirring occasionally, just until boiling. Remove from heat once the mixture comes to a boil.
  4. Pour the hot mixture over the peanut butter and cereal. Mix well with a spoon or spatula until the peanut butter is completely melted and all ingredients are evenly combined. 
  5. Transfer to your prepared baking dish. Using a spoon or spatula, gently press the mixture in an even layer
  6. Combine the chocolate chips and butterscotch chips in a heatproof bowl set over a bowl of simmering water. Heat, stirring occasionally until completely melted and smooth.
  7. Spread the chocolate mixture over the cereal layer and smooth out.
  8. Allow chocolate to set before cutting. Set them in the refrigerator to speed up the process.
