There is absolutely nothing better than fresh Peach Cobbler in the summer! Made completely from scratch with juicy, ripe peaches and a gloriously sweet sugar cookie crust, serve it with a scoop of vanilla ice cream and you have the perfect summertime dessert.
With summer in full swing, and all the delicious summer fruits available, my desserts-to-try list that I have scribbled down is endless! But this peach cobbler ALWAYS gets a front row seat, multiple times every summer for the past 8-9 years! I’m almost certain I could make it with my eyes closed. If you’ve ever stopped in for a quick visit or weekend stay, you most likely had my peach cobbler for dessert. 😉 It’s a family favorite and it’s the most delicious treat to enjoy fresh from the oven with a (big!) scoop of vanilla bean ice cream!
This Peach Cobbler recipe has mouthwatering sweetened peaches on the bottom and slightly crunchy, cookie goodness on top, with a pinch of nutmeg, all baked up in a casserole dish. This recipe isn’t exactly healthy by any means but that’s why it’s a treat! It includes lots of fruit so I guess it redeems itself that way, amiright? 🙂 So go ahead and have it for breakfast! No one has to know!
If you’re running short on time, frozen peaches can most certainly be substituted in place of the fresh ones. It’ll still be delicious! I’ve also made this cobbler using my canned peaches and it’s equally as tasty!
Yield: serves 6
INGREDIENTS
- 3 1/2 cups sliced peaches
- 2 tablespoons granulated sugar
- 1/2 cup butter softened
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- pinch of salt
- 1/8 teaspoon of nutmeg optional
- 1 large egg
- 1 1/2 teaspoons vanilla extract
INSTRUCTIONS
- Preheat oven to 350 F. Grease a 2 quart baking dish with non-stick spray.
- Spread sliced peaches in a single layer in the prepared dish. Sprinkle 2 tablespoons of sugar on top of the peaches and stir.
- In the bowl of a stand mixer, beat 1 cup sugar and softened butter together until fluffy and combined, about a minute. Add flour, baking powder, salt and nutmeg if using. Mix and then add in egg and vanilla. Continue to beat and mix together until just combined. Batter will be very gooey and that’s okay!
- Using a spatula (or your hands), carefully spread batter over the tops of peaches. Trying to spread out as evenly as you can and covering most of the peaches.
- Bake for 40-45 minutes or until crust is golden brown. Remove from the oven and let it stand for 10 minutes before serving. Enjoy with vanilla ice cream!
