Beef And Broccoli {Crock Pot}

This Beef and Broccoli is so easy to whip together in the crock pot and 5 hours later you have delicious strips of tender beef and juicy broccoli, all made with simple ingredients. It’s so much better than take-out! 

The sweet and savory sauce kicks the flavors up a notch and it’s paired nicely with steamed white rice. Obviously it’s best the day it’s made, but leftovers can easily be reheated in a skillet and enjoyed for days afterward.

Yield: 4-6 servings

INGREDIENTS 

  • 2 pounds sirloin steak, sliced thin
  • 1 cup beef broth
  • 1/2 cup low sodium soy sauce
  • 1/4 cup brown sugar
  • 1 1/2 Tablespoons sesame oil
  • 3 garlic cloves, minced
  • 4 Tablespoons cornstarch
  • 4 Tablespoons cold water
  • 1 bag (500g) frozen broccoli florets
  • cooked white rice to serve with

INSTRUCTIONS

  1. In a small mixing bowl, whisk together the beef broth, soy sauce, dark brown sugar, sesame oil, and garlic.
  2. Place the beef strips in the crock pot and pour the sauce over, tossing the strips to coat.
  3. Cover the slow cooker with the lid, turn it on low and cook for about 5 hours. You don’t want to cook the beef too long or it will start to shred.
  4. When the beef is cooked and fork tender, mix the cornstarch and water in a small bowl and slowly stir the mixture into the crock pot. Add in the broccoli, place the lid back on and cook for 30 minutes to let the broccoli cook through. Sometimes mine is ready before 30 minutes. You don’t want to add the broccoli until the very end or it will be mushy.
  5. Serve over fluffy, warm white rice and enjoy!
